Vineyard and terroir
The vineyards lie on slopes around Trento. The difference between daytime and nighttime temperatures helps the Pinot Nero keep its freshness and delicate aromas even when the grapes reach a good level of ripeness. Moraine soils rich in stone give the wine a more focused, slightly mineral character. Low yields bring greater concentration and depth.
Vinification
The grapes are hand sorted after harvest and then cold macerated for 7–8 days, to extract aromas and tannins gently. Fermentation and a short period of settling take place in stainless steel tanks.
Ageing
The wine matures for 10–12 months in barriques and oak casks. This softens the texture and adds subtle hints of vanilla, spice and almond without overwhelming the fresh fruit character.
Tasting profile
Elegant, with the freshness and delicate spice typical of northern Italian Pinot Nero. Flavours of cherry, redcurrant and ripe wild berries, with light earthy and spicy notes. Soft tannins and lively acidity make it balanced and fresh, and easy to pair with food. It is a lighter, more refined expression of Pinot Nero.
Label / history
Part of the "Bottega Vinai" range, which is available exclusively through restaurants and wine shops. Cavit was founded in 1950 as a cooperative by winemakers of Trentino. It now supports almost 4500 small wineries, produces 65% of all the wine made in Trentino each year, and its vineyards cover a total of 7000 hectares.
