Vinification
Production takes place at a modern facility near Trento dedicated entirely to sparkling wine. The grapes are harvested by hand during the first ten days of September. The wine is made by the Charmat method: temperature-controlled fermentation in stainless steel is followed by a 30-day second fermentation in sealed tanks. The Chardonnay is gently pressed, settled for 10–12 hours and fermented in stainless steel at 18–20 °C. The red varieties preserve acidity and contribute the distinctive cherry-red hue.
Tasting profile
Distinctive cherry-red colour with fresh acidity.
