Vineyard and terroir
The “Principato” vineyard lies in Tre Venezie in northeastern Italy, amid a landscape shaped by the snow-covered Alps and numerous lakes.
Vinification
The grapes are harvested at peak ripeness and fermented for 6–8 days at a controlled temperature in small stainless-steel vats. Malolactic fermentation is completed during ageing.
Ageing
The wine is transferred to large oak barrels and kept on its lees until malolactic fermentation is complete. It is then allowed to settle in tanks before bottling.
Vintage notes
In Veneto, the 2019 harvest was around 15–20% smaller than usual, although quality was good. Winter was slightly warmer than average and brought little rainfall. Very humid conditions and heavy rain in April and May significantly slowed the growing cycle, delaying flowering by about ten days. Hot weather in June and July accelerated ripening, while downpours and hail affected some vineyards in August.
Label / history
“Principato” means “principality.” Cavit was established in 1950 by winemakers from Trentino to improve quality control and simplify winemaking. Based in northeastern Italy, the group supports nearly 4,500 small wineries and represents their interests. Its vineyards cover 7,000 hectares, and it produces 65% of the wine made annually in Trentino.
