Vineyard and terroir
The vineyards lie on the hills of Trentino-Alto Adige at 200–400 m above sea level. The clay soils, mixed with limestone and silt, give the wine a distinctive mineral character.
Vinification
The Chardonnay is picked ripe, by hand, in early September. At the winery the grapes are pressed gently in a pneumatic press to preserve their delicate fruit character. The chilled must ferments in stainless steel vats at 18–20 °C.
Ageing
The wine rests on its lees for 3 months at low temperatures in stainless steel tanks, which gives it a lightly silky, rounded texture.

Dry and exceptionally refreshing, with delicate fruit, a distinctive mineral character and a lightly silky, rounded texture.
Label / history
Cavit was founded in 1950 as a cooperative group by Trentino winemakers, to make quality control easier and more effective. It is based in northeastern Italy and supports almost 4 500 small wine producers. It makes 65% of all the wine produced in Trentino each year, and its vineyards cover 7 000 hectares in total.
