Vineyard and terroir
The grapes grow in Sicily on limestone and clay soils. The vines are 14 years old on average.
Vinification
The grapes are harvested in September and macerated in temperature-controlled stainless-steel vats for 10–12 days.
Ageing
The wine matures in cement vats for 14–18 months, followed by six months in bottle.
