Vineyard and terroir
The grapes are grown in Sicily on limestone and clay soils. The vines average 14 years of age.
Vinification
The grapes are harvested in September and macerated in stainless-steel vats for 10–12 days at strictly controlled temperatures.
Ageing
The wine matures in cement vats for 14–18 months, followed by a further six months in bottle.
