Vineyard and terroir

Rossofonte is made from carefully selected Sangiovese Grosso picked by hand in the estate vineyards. The vines grow at 240–360 metres above sea level in medium-textured soils containing galestro marl of Eocene origin.

Grapes

100% Sangiovese Grosso.

Vinification

Fermentation and refinement take place in stainless-steel containers and glass-lined concrete vats under temperature control provided by cooling jackets and immersion plates.

Ageing

The selected 2014 technical sheet specifies ageing in Slavonian oak casks ranging from 7.5 to 20 hectolitres.

Tasting profile

Ruby red. Intense aromas of ripe berries carry balsamic nuances. Sweetness and acidity alternate on the palate, while the sweet-and-tart fruit recalls raspberry and ripe blackberry. Star anise and pink pepper shape the spicy finish, supported by powdery tannins.

Serving and pairing

Serve at 18°C in a tulip-shaped crystal glass. Pair with traditional Tuscan dishes, including steaks and meat sauces. In its youth it can also accompany fish soup rich in scorpionfish and monkfish. Store bottles horizontally in a cool, dark place without temperature fluctuations.
