Vineyard and terroir

Fabivs is produced from Syrah grown in Vigna del Conte. French-origin vine material was planted in this site, where the terroir and microclimate suit the variety. The vineyards lie between 240 and 360 metres above sea level on medium-textured soils containing Eocene-origin marl.

100% Syrah.

Vinification

Fermentation and refinement take place in stainless-steel and vitrified-concrete vats. Cooling plates and jackets control the temperature.

Tasting profile

Deep ruby red with purple hues. Powerful and structured, with fruit and spice supported by soft, velvety tannins and a persistent finish.

The published 2024 medal note describes a bright, deep carmine colour. Its expressive bouquet combines ripe and jammy fruit, violet, toast, smoke and spice. The palate is fine and elegant, with roasted and toasted notes, silky integrated tannins and a long finish.

Serving and pairing

Open one hour before serving and pour at 18°C into a large balloon-shaped crystal glass. Store bottles horizontally, away from light and protected from extreme or fluctuating temperatures. Pair with structured main courses, stewed or roasted meat and game, blue or mature cheeses, or dark-chocolate desserts.

Label / history

Produced since 1998, Fabivs was dedicated by Giuseppe Bianchini to Fabivs de’ Vecchis, the bishop of Montalcino who began construction of what is now Palazzo Ciacci Piccolomini d’Aragona in 1672. An anti-counterfeiting hologram protects the capsule.
