Vineyard and terroir
The fruit comes from Cincinnato’s vineyards on the hilly, well-ventilated southern side of Cori in Lazio. The vines grow at 200–250 m above sea level on volcanic clay soils.
Vinification
The grapes are harvested in the second half of September, then gently pressed and destemmed. After one day of static settling, fermentation proceeds at 15 °C for 12 days. The wine remains in contact with fine lees for two months and does not undergo malolactic fermentation.
Ageing
The wine ages for six months in stainless-steel tanks, followed by six months in bottle.
