Storia
Founding
Cincinnato was founded in Cori in 1947 by a group of farmers who wanted to grow the best possible grapes, make wine, and support local agriculture. The cooperative was named after the ancient Roman general Lucius Cincinnatus, who led the battle against the Aequi tribe in 458 BC. After defeating the Aequi, Lucius declined the honors and public offices he was offered, choosing instead to return to his land, said to have been near what is now the village of Cori.
Growth and Modernization
A winery equipped with advanced technology was built in 1979. Over the years, the cooperative has adapted to changing conditions in local viticulture while maintaining a leading role in growing native grape varieties and making wine. In 1995, Cincinnato introduced a quality project to restore and support the local Nero Buono and Bellone varieties. It later adopted a winemaking protocol that includes careful vineyard monitoring, a harvest calendar, and defined vinification processes.
Today
Cincinnato is now a modern winery that brings together 130 leading farms and is a major producer of native grape varieties in the Lazio region.
Terroir
The vineyards are located in Cori, in the Lazio region, and cover a total of 550 ha. Soils are mainly volcanic in the valley and limestone at the foot of the mountains.
Vinificazione
Vines are trained using classic Cordon and Guyot systems, averaging 15 years old, with a planting density of 4,000–5,000 vines/ha. The vineyards are managed with integrated crop protection methods and without irrigation, using organic grape-growing methods. Average annual yields are around 9,000–10,000 kg/ha.

Filosofia
The cooperative's founders wanted to grow the best possible grapes, make wine, and support local agriculture. Cincinnato places great importance on the environment and works to preserve the area's natural character and beauty, reflected in its organic grape-growing methods, photovoltaic system, and natural-gas-powered vehicles.
