The grapes are grown in Eugenio Collavini’s vineyards.
Vinification
The grapes are harvested at optimal ripeness and undergo traditional sparkling-wine vinification using the Charmat method. Secondary fermentation takes place in large, sealed stainless-steel tanks. The wine then rests under pressure before bottling.
