Grapes
Moscato Canelli grapes are used.
Vinification
After harvest, the grapes are gently pressed as whole bunches to preserve their aromas. The must is cooled to 6–8 °C to prevent spontaneous fermentation, and secondary fermentation takes place at 0 °C.
Ageing
The wine rests with selected yeasts for three months, developing its aromatic character.
