Vineyard and terroir
The grapes grow at 270–350 metres above sea level on vines averaging 14 years of age.
Vinification
The grapes are harvested in late September and undergo one day of cold maceration. After gentle pressing, fermentation takes place at a controlled low temperature for 20 days.
Serving and pairing
Pair with baked fish, grilled meat, mushroom risotto or young cheeses.
