The fruit comes from the winery’s vineyards in Emilia.
Vinification
After harvest, the grapes remain on their skins for two days. Fermentation takes place in stainless-steel tanks without temperature control. Under the ancestral method, fermentation restarts in the bottle, naturally producing carbon dioxide and fine bubbles.
