Vineyard and terroir
Monastrell comes from old vineyards in Los Pandos, Almansa. The site has a clear, dry environment and a favourable microclimate, with marked day-to-night temperature shifts even during the hottest months. These conditions support aromatic intensity and balanced acidity.
Grapes
100% Monastrell.
Vinification
After crushing, fermentation takes place in rotating horizontal tanks. Maceration lasts eight days at 26°C. Malolactic fermentation precedes maturation in oak. After barrel ageing, the wine is lightly clarified and cold-stabilized, then receives amicrobic filtration before bottling.
Ageing
At least six months in 300-litre French oak barrels. New oak accounts for 15% of the barrels.
Tasting profile
Clear and bright, with an intense cherry-red colour. The nose retains Monastrell’s fruit character, combining subtle preserved-fruit notes with smoke and toast from gently toasted French oak. The palate is fresh and balanced, lively and full-bodied, with pronounced acidity and fine, smooth tannins.
Serving and pairing
Serve at 16–18°C. Pair with richly flavoured stews, substantial meat dishes, pasta with mushrooms, Spanish ham or aged cheese.
