Grapes
A blend of Trebbiano, Chardonnay, Traminer, Sauvignon Blanc and Malvasia.
Vinification
Each variety ferments separately in Clayver ceramic vessels with capacities of 2.5 and 4 hL. Most of the fruit macerates on its skins, while a smaller portion is pressed directly as whole bunches. Depending on the vintage, this approach can give the wine an orange-wine character. It is generally made without added sulphites.
Ageing
The wine remains on its full lees, with periodic bâtonnage performed as needed. Bottling takes place approximately 10–12 months after harvest.
Technical data
Production is approximately 1,000 bottles.
Tasting profile
The colour can be pronounced enough for some vintages to be described as orange wine. The palate and aroma are marked by surprising fruit complexity, with a sunny, radiant character.
Serving and pairing
It can be served as an aperitif or paired with strongly flavoured fish dishes and mature cheeses.
