Vineyard and terroir
Fruit is drawn from all of the estate’s vineyards, which are farmed with an emphasis on organic and biodynamic principles.
Grapes
The Sangiovese grapes are selected before vinification.
Vinification
The grapes are hand-harvested, gently pressed and fermented in open cement vats. Maceration lasts 40–60 days.
Ageing
The wine matures on its lees for 18 months, with 10% aged in new tonneaux and 90% in cement and steel vats.
