Vineyard and terroir
The growing area is Friuli-Venezia Giulia. Its position near the Alpine foothills and exposure to cool Adriatic winds moderate the climate. The vines are trained to lateral Guyot.
Grapes
100% Chardonnay, exclusively from the Musqué clone. This clone contributes floral and fruit aromas, elderflower-like nuances, and warmer exotic notes of apple and banana.
Vinification
Whole berries are gently pressed in a pneumatic press. After the first racking, the must is clarified by flotation and fermented in stainless-steel tanks at approximately 15°C. The decision to encourage or block malolactic fermentation depends on the vintage; wines that complete it develop a creamier expression. Bottling takes place under vacuum.
Ageing
The wine matures on its fine lees in the fermentation tanks for three months, with frequent bâtonnage, followed by at least two months of bottle rest in the cellar.
Technical data
Alcohol: 12.5%. Production: approximately 60,000 bottles. First vintage: 1993. Closures are DIAM composite corks or STELVIN screwcaps.
Tasting profile
The Musqué clone gives a fruit-led, aromatic style with floral, elderflower-like and balsamic or musky nuances alongside peach, apple, banana, pineapple, pear and honey. Malolactic fermentation, when encouraged for a particular vintage, adds a softer, creamier dimension.
Serving and pairing
Serve at 12°C. Suitable with starters, chicken, turkey, halibut, trout, cod, sturgeon, salmon, lobster, crab, scallops, shrimp, clams and oysters. Cheese pairings include soft or semi-soft cow’s-milk cheeses and goat cheese. Vegetable accompaniments include squash, peas, zucchini, asparagus, Jerusalem artichokes, mushrooms and truffles. Drink on release or within five years.
