Vinification
The grapes spend 18 hours in a closed tank in contact with their skins. The skins are then removed and the must is transferred to temperature-controlled tanks for fermentation. The wine remains on its lees until bottling and is protected from oxygen to preserve its colour. It is sealed with a composite DIAM cork.
Technical data
Production amounts to 15,000 bottles.
Tasting profile
Light copper colour with luminous clarity. The generous aromas combine wild strawberry, elderberry, hay and dried roses with hints of dried fruit and almond. Robust fruit and crisp acidity are balanced across a complex palate whose flavours echo the bouquet.
Serving and pairing
Serve at 12 °C. Chicken is a principal match, including versions marinated with lemon or white wine, while San Daniele prosciutto offers a regional pairing. Other options include shrimp, scallops and fish, or a Thai-style shrimp stir-fry with chillies and peppers. Cow’s-milk cheeses such as Brie, Gruyère, Mozzarella and Parmigiano Reggiano emphasize the wine’s sweeter notes; Gouda, Roquefort, Manchego, Fleur du Marquis and Etorki highlight its earthier, mineral side. It also suits light pasta, herbs and vegetable dishes. Because the wine itself is fairly acidic, citrus and tomato-based recipes are best avoided.

The style begins with the naturally grey-blue colour of Pinot Grigio berries, using skin contact to express the variety’s colour potential.
