Vineyard and terroir
The Sangiovese is selected from an estate cru at Sterpeti, planted at 250 m above sea level with an east–west orientation. Planting density is 6,400 vines per hectare, trained to bilateral spurred cordon.
Grapes
Sangiovese.
Vinification
Harvest normally takes place in the first week of September. Skin contact is kept extremely short, at approximately one hour. The grapes are destemmed and undergo around 24 hours of cryomaceration before pressing. Fermentation then takes place at controlled temperature in temperature-regulated stainless-steel tanks for 20–25 days. The wine matures on its fine lees for approximately two months and is stabilized by cold treatment.
Ageing
Two months in bottle.
Tasting profile
Pale pink with coral highlights. The intense bouquet combines red fruit, wild cherry and fresh raspberry with floral nuances of violet and cyclamen. The palate is well structured, with a fresh, savoury finish. Its mineral structure gives the wine character and depth while supporting an approachable, versatile style.
