Vineyard and terroir
The grapes are grown in the commune of S. Pietro di Lavagno at 140–160 m above sea level. The vineyards face south and southeast and have calcareous volcanic soils. The vines were planted between 1985 and 1994.
Grapes
The Corvina component comprises Corvina Grossa and Corvina Gentile.
Vinification
The grapes are harvested by hand into 15 kg crates and destemmed at the winery. Maceration and fermentation take place in upright vats at a controlled temperature for eight days, followed by storage in stainless-steel tanks. In January, Amarone pomace is added, initiating a second fermentation lasting around four days. The wine is then separated from the pomace and racked.
Ageing
The wine ages in French oak tonneaux for 14 months, followed by eight months in bottle in the winery’s cellars before release.
