Vineyard and terroir
The Sauvignon Blanc comes from estate vineyards in La Morra, on the hill near the winery. The technical data place the vineyard at 480 m a.s.l., while the introductory account describes its elevation as approximately 500 m. The Guyot-trained vines face south to south-east and grow on limestone-and-clay soil.
Grapes
100% Sauvignon Blanc.
Vinification
The grapes are harvested by hand at the beginning of September. Fermentation takes place in temperature-controlled tanks at 15°C for 20 days.
Ageing
The wine matures on fine lees in stainless-steel tanks with frequent bâtonnage.
Tasting profile
Straw yellow with greenish reflections. The fine, elegant nose combines primary aromas of acacia and sage with Sauvignon Blanc’s characteristic secondary aromas. The palate is fresh, savoury and balanced.
Serving and pairing
Serve at 8–10°C. Suitable as an aperitif and with fish, white meats or grilled vegetables. It can be enjoyed immediately or aged moderately.
Label / history
Olivia debuted with the 2023 vintage. The name commemorates Engineer Lanci’s Weimaraner, the winery mascot, who accompanied him on walks through the Sauvignon vineyards near the house. The wine was conceived as a reminder of his bond with this hill.
