Vineyard and terroir
The grapes grow on limestone and clay soils in a hilly area with a predominantly cool Mediterranean climate.
Vinification
The grapes are harvested between 15 September and 5 October. A slow fermentation lasts 120–150 days, followed by secondary fermentation in autoclaves using the Charmat method.
