Vineyard and terroir
The Aglianico is grown at the foot of Monte Vulture on young vines aged 6 to 10 years. The grapes have not yet developed highly concentrated flavours, but already show the variety's potential. The soils are mineral-rich and volcanic, and the climate is marked by shifts in temperature. Viticulture is organic, with minimal use of sulfites and careful vineyard work to keep the aromas clean and clear.
Vinification
The grapes are harvested by hand in the first week of October, taken quickly to the winery and chilled to preserve their aromas and prevent oxidation. Winemaking includes 4 days of cold maceration and gentle pressing for around 30 minutes. The wine is stabilised in stainless-steel tanks for about two and a half months, then filtered. This approach preserves fruit, lightness and minerality, qualities not often found in red grape varieties made as rosé.
Ageing
After filtering, the wine rests in the bottle for 2 months.
