Vineyard and terroir
The grapes come from the best sites in the commune of San Michele all'Adige. The local microclimate has sharp temperature swings, which help the aromas develop with extra finesse. Yields are kept below 80 hl per hectare.
Vinification
The grapes are harvested by hand after summer thinning and carefully selected. Only the best grapes, those that have reached full phenological ripeness, are used. The whole bunches are pneumatically pressed under an inert nitrogen atmosphere. Cold maceration follows for 4–6 hours. Fermentation takes place in temperature-controlled stainless steel tanks.
Ageing
The wine rests on its lees for several months with frequent bâtonnage. It then spends several more months in bottle before release.

Fresh, with a style that clearly reflects its northern setting.
