Vineyard and terroir
The Chardonnay comes from small plots at high elevation in Trento.
Vinification
The grapes are harvested by hand and carried in small crates to avoid damage. Whole bunches are gently pressed under an inert atmosphere to prevent oxidation. Primary fermentation takes place in temperature-controlled stainless-steel tanks. Secondary fermentation occurs in the bottle by the traditional method. A minimal dosage is added to retain the terroir's distinctive character.
Ageing
The wine rests on its lees in the bottle for more than 24 months.
