Vineyard and terroir

The Nebbiolo comes from vineyards in Barbaresco, Neive and Alba; the 2021 technical sheet also names Treiso. The vines are 20–25 years old, face south and southwest, and grow in clay-limestone soils. They are Guyot trained under sustainable-viticulture practices, with a stated yield of 8,000 kg/ha. Harvesting is entirely manual.

Grapes

100% Nebbiolo. Paolo Giacosa is the winemaker for the 2021 vintage.

Vinification

The bunches are hand-sorted on a vibrating table and cooled with carbonic snow to prevent oxidation and substantially reduce sulphur use. After destemming, the berries undergo a second manual selection on another vibrating table, followed by gentle crushing. Screw conveyors are excluded throughout this handling process to minimize stress on the fruit.

The must is chilled before temperature-controlled fermentation in stainless-steel vats. Maceration lasts more than 20 days, with délestage and partial use of the submerged-cap technique.

Ageing

The wine matures for 20 months in medium-sized oak casks holding 2,500–4,000 litres.

The 2021 wine page gives 14.5% alcohol by volume, while the 2021 technical sheet gives 14%. The stated serving temperature is 16–18 °C, and the suggested cellaring window is 10–15 years.

Tasting profile

Deep ruby red with garnet highlights. The broad, intense bouquet combines liquorice, tobacco, spices, leather and faded rose. The palate is fine and velvety, medium- to full-bodied and well balanced, with silky tannins, soft acidity and an elegant finish. The style emphasizes harmony between Nebbiolo's varietal character and the wine's richness and power.

Serving and pairing

Serve at 16–18 °C with hunting game, roasts, mature cheeses or truffle-based dishes.

Vintage notes

The 2021 growing season began with a long, mild winter and limited precipitation. Budbreak arrived in early April and was followed by night frosts, below-average temperatures and evenly distributed rain. May remained cool and frequently rainy; June and July were hot and dry. Vineyard development lagged behind 2020, while August brought no heat waves. The estate-wide harvest proceeded regularly from late August. Yields were below average, and the fruit was healthy, fully ripe and notably balanced in acidity.
