Vineyard and terroir
The grapes come from sustainably farmed vineyards. Cantine Ermes cultivates more than 6,000 ha across the provinces of Trapani, Agrigento and Palermo, encompassing varied microclimates and geologically diverse soils.
Vinification
The grapes are harvested when ripeness and acidity reach the desired balance. Traditional red-wine vinification includes fermentation in temperature-controlled steel vats, preserving freshness and the variety’s bright character.
