Vineyard and terroir
The production area is Acerenza in Basilicata. Selected, low-trained vineyards lie on volcanic soils along the slopes of Mount Vulture, reaching elevations of 800 m. The growing area is isolated and unspoiled.
Grapes
100% Aglianico.
Vinification
The grapes are harvested by hand in selected vineyards, followed by selection of the best fruit, gentle crushing and destemming. A five-day pre-fermentative maceration is conducted at approximately 4–5°C. Fermentation then proceeds at 22–24°C.
Ageing
The wine matures for 10 months, with 60% kept in stainless-steel tanks and 40% placed in used barriques. It receives a further three months of bottle ageing.
Tasting profile
Bright red with violet reflections. Cherry and sour black cherry aromas mingle with spice and vanilla. The palate has good structure and mature tannins, leading to a long balsamic finish and persistent aftertaste.
Serving and pairing
Serve at 18°C. Pair with slow-cooked rack of lamb, pappardelle with pork ragù, roasted meats or filet mignon.
