Vineyard and terroir
The wine comes from four hectares in Contrada Gelosia, within the commune of Barile. The 50-year-old vines stand at 600 metres above sea level and form part of Paternoster’s historical and ampelographic heritage. Yields are exceptionally low at 35–40 q/ha, or 3,500–4,000 kg/ha. Volcanic soils rich in tuff contribute depth and complexity, supporting wines capable of ageing for decades. The vineyards are certified organic.
Grapes
100% Aglianico del Vulture.
Vinification
The grapes are harvested by hand and vinified by the classic red-wine method. Fermentation and skin maceration take place in stainless steel for 15–18 days at 25–28°C. Three pump-overs are performed each day until three-quarters of fermentation is complete, after which délestage is used. Parcels are vinified separately before blending.
Ageing
The wine matures for 24 months: 50% in large Slavonian oak casks and 50% in French barriques that have previously held one wine. It then ages for 12 months in bottle.

Alcohol: 14% vol. Formats: 750 ml and 1.5 L.
Tasting profile
Bright, deep ruby red. The broad and complex bouquet combines red fruit, leather, balsamic herbs and dark spices. The palate is dry, warm and powerful, with substantial structure, elegance and an exceptionally persistent finish.
Serving and pairing
Serve at 18°C in a large glass. Pair with roasts, particularly lamb and red meats; it may also be enjoyed on its own as a meditation wine.
Vintage notes
The 2015 growing season was especially hot and dry. July and August brought high temperatures and an absence of disease pressure. Above-average temperatures in mid-September advanced harvest by approximately one week, while marked day-to-night temperature variations allowed complete, even ripening. The resulting wines were powerful, warm, elegant and built for long ageing.
Label / history
Named for founder Anselmo Paternoster and dedicated to his memory, Don Anselmo represents the winery’s roots and the continuity of its tradition. Careful work in selected vineyards, separate vinification, blending and measured wood maturation define this flagship expression of Aglianico from Monte Vulture.
