Vineyard and terroir
The vines are 15–20 years old and grow on limestone-based soils in the hills of Irpinia, at elevations of 650–1,650 m. Planting density is 4,500 vines per hectare. Fiano has been cultivated in the area since ancient times, including by the Samnites in the third century BC.
Vinification
The grapes are harvested by hand in the first half of October and immediately pressed gently with their stems. Fermentation takes place cold in stainless-steel vats. Malolactic fermentation is prevented.
Ageing
The wine rests for 90 days in stainless-steel tanks.
