Vineyard and terroir
The Catarratto comes from the "Masso" vineyard, named after a mass of sandy rock containing red stones rich in iron. This strongly mineral site gives both the grapes and the finished wine a distinctive savory edge and freshness. The vines grow wild, are hand-grafted and average 55 years of age. Farming is organic.
Vinification
The grapes are harvested by hand and fermented in cement tanks, with skin contact for a quarter of the fermentation period.
Ageing
The wine ages on its lees for 6 months, with regular stirring.
Tasting profile
Intense aroma; a very fresh, lasting taste with a savory, mineral edge.
Serving and pairing
Suited to an aperitif. It pairs well with fish, white meat and fresh cheeses.
