Vineyard and terroir
The grapes come from the Rose di Adele vineyard on the slopes of Mount Etna in Sicily, at 600 m above sea level. The soils are sandy clay. The vines average 40 years of age and are hand-grafted onto wild plants. The organic wine takes its vineyard's name from the rose garden that Elio, father of Fabio Sireci, dedicated to his wife Adele.
Vinification
The grapes are harvested by hand into small crates. Winemaking starts with 2 hours of cold maceration on the skins, followed by very gentle pressing. Fermentation takes place in cement tanks at 18 °C for 10 days.
Ageing
The wine spends 6 months on the lees, with regular bâtonnage.
Label / history
The name "Rose di Adele" refers both to the vineyard and to the rose garden Elio Sireci dedicated to his beloved wife, Adele. The Nerello Mascalese variety takes its name from the Mascali plain between Mount Etna and the coast.
