Vineyard and terroir
The vineyard is on Favignana, the largest island on which the Calamoni estate holds land. It lies at sea level, 10 metres from the coast, with a southern exposure. The naturally limestone soil has a high concentration of marine fossils and deposits accumulated over thousands of years. The proximity of the sea contributes maritime notes to the fruit character.
Vinification
The grapes are harvested by hand in early September and gently pressed. Fermentation takes place in stainless-steel tanks at a controlled 14–16 °C for 20 days.
Ageing
The wine matures on its lees in stainless-steel tanks for six months, followed by one year in bottle.
Tasting profile
The wine has a distinctive, elegant character, with fruit accompanied by unusual maritime notes.
Label / history
The Favinia range grew out of sea-influenced viticulture in the vineyard on Favignana. Firriato was founded in 1985 by Salvatore Di Gaetano in Erice, near Trapani.
