Vinification
The grapes are gently pressed and the juice is chilled to 10 °C. Fermentation takes place in stainless steel tanks, and the wine remains on its lees for a while.

Label / history
The Folonari company was founded by Francesco Folonari in 1825 in Valcamonica, in the Veneto region. In the mid-nineteenth century he moved with his family to Brescia, in the foothills of the Alps. He made wine and also bottled it, which was unusual in the second half of the nineteenth century. His aim was good-quality, affordable wines for everyday drinking, a philosophy the company still follows. Folonari has vineyards in several Italian regions, including Tuscany, Chianti, Veneto and Bolgheri.
