Vineyard and terroir
The grapes come from the Le Mattine area of Tenuta Fonzone in Paternopoli. The vines were planted in 2011 in sandy clay soils at 380 metres above sea level. The soils give the wine an elegant bouquet. The Ifalco stream runs beside the vineyard and helps moderate the local microclimate.
Vinification
The harvest is divided into four stages, beginning in October and ending late in the month. The late harvest allows the grapes to develop greater concentration. Each batch is handled differently:
- First batch: traditionally crushed, cooled and gently processed, then fermented in steel tanks.
- Second batch: 12-hour cold maceration.
- Third batch: 3 days of maceration.
- Fourth batch: vinified in terracotta amphorae for 6–8 months.
Tasting profile
Bright acidity, good alcohol content and structure. The wine has an elegant bouquet, notable structure and body.
