Vineyard and terroir
The vines grow at 250–300 m, on predominantly erosional soils of porphyry origin formed through the decomposition of the surrounding rocks. Exposures range from south to southwest.
Grapes
Merlot.
Vinification
Alcoholic fermentation takes place in open-top stainless-steel tanks, with frequent punch-downs and pump-overs. The wine is subsequently transferred to barriques for malolactic fermentation.
Ageing
Maturation lasts 18 months in barriques, followed by one year in bottle.
Technical data
Yield is 40 hL/ha, and production is approximately 8,000 bottles.
Tasting profile
Garnet red. Elderberry, woodland berries and dried figs are joined by freshly ground pepper and star anise. The palate combines pronounced freshness with a layered structure, fullness and firm tannins. Toasted and vanilla nuances lead into a long finish.
Serving and pairing
Serve at 18–20 °C. Pair with game, red meat or mature hard cheeses.
