Vineyard and terroir
Pinot Bianco is grown on Guyot-trained vines at elevations between 400 and 800 metres. Exposures range from south to southwest. The sites reflect the area's geological diversity, from lighter sandy soils to heavier soils produced by porphyry erosion.

Vinification
Most of the must ferments at controlled temperature in stainless-steel tanks, while a portion ferments in barriques.
Ageing
Before bottling, the wine remains on its lees for approximately five months to develop complexity and fullness. It then requires at least three to four months in bottle for its characteristic bouquet and complexity to emerge.
Technical data
Yield: 60 hl/ha. Production: 20,000–25,000 bottles. Recommended serving temperature: 14–16 °C.
Tasting profile
Bright straw yellow. Fruity and spicy aromas recall ripe apples, wildflowers and fresh bread. The palate has a decisive personality, an elegant yet robust structure and harmonious acidity. The finish is full and persistent.
Serving and pairing
Suitable for substantial starters; pasta, rice and fish dishes with or without sauces; light Asian dishes; and curry-spiced preparations.
