Vineyard and terroir
The vineyards lie in the hills of the southern part of the municipality of Montepulciano, Tuscany, on centuries-old slopes near Lakes Montepulciano, Chiusi and Trasimeno, with Mount Amiata in the background. The vines are 20–25 years old and grow in soils ranging from clay to fine sand with marine deposits. The climate is mild. Yields are around 8 tonnes per hectare, which allows the grapes to reach a balanced level of sugar and acidity.
Grapes
The blend is based on Sangiovese, with a small amount of Cabernet Sauvignon adding depth and structure.
Vinification
The grapes are picked at optimal ripeness and fermented on the skins for 12–15 days, which preserves the natural energy of the variety. Malolactic fermentation takes place in oak barrels.
Ageing
The wine spends six to eight months on fine lees, which gradually softens it and gives a light touch of oak.

Label / history
Gattavecchi is a Montepulciano winemaking family, now in its fourth generation. The winery was completely destroyed by bombing in 1944 and rebuilt by Valentine Gattavecchi. The Simonetti-Baroncelli cellars and vineyards, which belonged to monks of the "Padri Servit" monastery as far back as the 12th century, were restored. Today the estate is run by Valentine's children Luca, Gionata and Daniella, guided by their mother, Gianna.
