Vineyard and terroir

The Cabernet Sauvignon grows at approximately 110 metres above sea level on limestone soils with small chalk deposits. The vineyards are in Signa, several dozen kilometres west of central Florence, where the microclimate is warm. The estate has 12 hectares of vines, averaging 10 years of age; its vineyards lie at approximately 80 metres above sea level overall.

Ageing

The wine rests in new oak barrels for 20–24 months.

Bold aromas and flavours accompany a well-defined structure, freshness and subtle mineral notes.

Label / history

The label bears the motto “Those who believe the most always win!” Fossi gives each of his wines its own name and label, using sayings, quotations and aphorisms connected with its story and character. The winery produces 30,000–50,000 bottles annually, depending on the weather and the harvest from each vineyard.
