Vineyard and terroir
The Cortese fruit comes from the producer’s 6 ha organic vineyard in the municipality of Gavi. The site faces south and southeast, with clay soils containing sedimentary rock.
Vinification
The grapes are harvested by hand and fermented for 10 days in temperature-controlled stainless-steel tanks at 16 °C.
Ageing
The wine rests on its lees in stainless steel for four months, followed by 12 months in bottle.
