Vineyard and terroir
The Sauvignon Blanc comes from the small, south-facing Maciete Fume plot in Veneto, at 450 m above sea level. The vines average 30 years of age. The vineyard is certified organic and managed with minimal intervention and biological methods intended to maintain balance among the soil, climate and vines.
Vinification
The grapes are usually harvested by hand in September at optimal ripeness and transported to the winery in small crates to preserve the berries. After selection, they are gently pressed and undergo a brief cold maceration. Fermentation takes place at a strictly controlled temperature, partly in stainless-steel tanks and partly in oak barrels. No sulfites are used during vinification, and cellar work follows a minimal-intervention approach.
Ageing
The wine remains on its lees until summer, followed by at least six months in bottle.
