Vineyard and terroir
The fruit comes from the certified-organic Salvarenza vineyard. Its vines are more than 100 years old, and around one-third are ungrafted survivors dating from the phylloxera outbreak.
Vinification
The grapes are harvested entirely by hand and fermented in French oak barrels of various sizes. No sulfites are used during vinification.
Ageing
The wine matures in oak barrels for 12 months, including time on the lees. After bottling, it rests for at least another six months in rock-cut cellars maintained at optimal temperature and humidity.
Tasting profile
The wine is aromatic, with a bright, complex and layered bouquet. The palate is rich, dense and concentrated.
Label / history
The Salvarenza vineyard takes its name from a local legend. A young woman named Renza was kidnapped by bandits and rescued by a noble knight on the site where the vineyard now stands.
