Vineyard and terroir
The fruit comes from a former cherry orchard at 340–370 m above sea level. The vineyard has a southeast exposure and clay-limestone soils. Almost constant winds from the slopes of the French Alps aid ripening.
Vinification
After harvest, the grapes are gently pressed without exposure to oxygen. The must ferments in stainless-steel tanks.
Ageing
The wine rests for seven months.
Tasting profile
The ageing gives the wine a softer texture.
Serving and pairing
Suitable as an aperitif and with salads, appetisers, fish, seafood and shellfish.
