The cuvée comprises 70% Pinot Nero and 30% Chardonnay.
Vinification
Vinification takes place through a slow, multi-stage alcoholic fermentation in stainless steel. The first stage lasts about three weeks and uses crushed, destemmed grapes. The must is then rapidly chilled to halt fermentation and allow the primary yeast to settle. A long fermentation at low temperature follows in large tanks. At the end of winter, the Pinot Nero and Chardonnay cuvées are blended before secondary fermentation begins in sealed tanks.

The wine has fine streams of tiny bubbles and a light cap of foam.
