Vinification
The vermouth follows the original recipe of the company's founder, Giulio Cocchi. It uses spirit-based extracts of more than three dozen herbs, roots, flowers, seeds, tree barks and citrus peels, some of them kept secret. The main ingredients are cinchona bark, rhubarb root, artemisia flowers, orange peel and grapefruit peel. They are supported by bitter orange, camphor, rosemary, sandalwood, musk, myrrh, nutmeg and balsamic woods. Burnt sugar gives the amber colour and softens the bitterness.
Tasting profile
Amber in colour. The burnt sugar adds notes of caramel and natural vanilla, without the use of vanilla pods. It tempers the bitterness of the botanicals.
Label / history
Storico Vermouth di Torino ("Historic Vermouth of Turin") was created to celebrate the 120th anniversary of the Cocchi winery, and the name comes from that. The recipe is Giulio Cocchi's original, which the text dates to the end of the IX century, when vermouth was expected to be sweet and amber. The text presents the wine as reflecting the heritage of medieval Piedmont, which it calls Italy's true Kingdom of Vermouth. It became popular quickly and is now a regular feature in bars and restaurants around the world.
