Grapes
The wine is made from the native Sardinian Granazza grape, also known as Nuragus.
Vinification
The grapes are harvested later than usual, concentrating their aromas and flavours. The must ferments spontaneously in oak barrels.
Ageing
After maturing in barrel, the wine is lightly filtered and then rests in bottle for at least another 3–6 months.
Tasting profile
A distinctive, unconventional and old-fashioned white wine with a complex, powerful and slightly sweet palate and concentrated aromas and flavours.
Serving and pairing
Its rich character is better suited to meat than to typical fish dishes. Pair with either white or red meat.
