Vineyard and terroir
The grapes come from vines averaging 11 years of age.
Vinification
The grapes are harvested at optimal ripeness. The bunches are dried for 2–3 weeks to concentrate their natural sugars, then destemmed and vinified. Fermentation takes place in stainless-steel tanks at 22–23 °C, followed by 10–15 days of maceration. Malolactic fermentation also occurs in stainless steel.
Ageing
The wine ages for 12 months: 70% in one- and two-year-old 225-litre French oak barriques, 25% in 1,900-litre French oak barrels, and 5% in terracotta amphorae.
Serving and pairing
Pairs with meat dishes and cheese.
