Vineyard and terroir
This single-vineyard wine comes from the Monte Sant’Urbano estate in Fumane. The hillside vineyard lies at 280–350 m above sea level, enjoys excellent sunlight and has a high average vine age. Its volcanic-origin, calcareous-clayey soil retains moisture and helps prevent excessive dryness. Vines are trained to the Verona pergola system on terraces supported by dry-stone walls known as marogne.
Grapes
The blend shown on the main wine page and the latest published technical vintage differs. For the 2019 technical vintage it is 70% Corvina Veronese and Corvinone, 20% Rondinella, 5% Molinara and 5% other indigenous varieties.
Vinification
For 2019, the grapes were manually selected from 20 September to 11 October and dried for 24 days in a fruit-drying room under controlled temperature, humidity and ventilation. Crushing and destemming began on 28 October. Maceration lasted ten days in stainless-steel tanks at 20–24°C, with daily pump-overs and délestage. The wine was then moved to glass-lined cement tanks to complete alcoholic and malolactic fermentation.
Ageing
Ageing lasts 24 months in 500 L Allier oak casks. The main wine page adds six months of maturation in bottle.
Technical data
The 2019 wine has 13.5% alcohol, 3.4 g/L residual sugar, 5.4 g/L total acidity and 0.48 g/L volatile acidity. Formats are 375 ml, 750 ml, 1500 ml, 3000 ml and 5000 ml.
Tasting profile
Deep ruby red, with a broad, enveloping bouquet of fruit and aromatic herbs. Spicy accents lead into a firm, forthright palate whose rounded texture and elegance provide balance. The style combines concentration from light appassimento with freshness and is suitable for ageing.
Serving and pairing
Pairs with grilled red meats, braised meats, roasts and cheeses, particularly mature cheeses.
Vintage notes
The 2019 grapes underwent 24 days of drying. The non-vintage production description gives an approximate drying period of 20–25 days, while the vinification section gives a broader 25–30-day range.
