Vineyard and terroir
Ràpio is a small project rooted in Contrada Altarello, where poor soil and marine ventilation shape a strongly territorial expression. The 2 ha vineyard occupies east/west-facing, hilly ground rich in rock fragments and exposed rocks. The twelve-year-old vines are Guyot-trained at a density of 5,000 vines per hectare, with an average yield of 1.0 kg per vine. Grapes
100% Catarratto.
Vinification
Harvest takes place in the first half of September. Fermentation lasts approximately 10–12 days at about 18°C. Malolactic fermentation takes place in stainless steel.
Ageing
Maturation takes place in stainless steel, followed by at least three months in bottle.
Technical data
The English materials give annual production as approximately 12,000 bottles.
Tasting profile
Straw yellow. The nose is fresh, mineral and savoury, with delicate saline nuances. The palate combines freshness with Mediterranean warmth and notes suggestive of Mediterranean scrub.
Serving and pairing
Serve at 8–10°C. Pair with fish and shellfish or pasta dressed with Mediterranean sauces.
